Fondi Pizzeria will serve its last Neapolitan pie at 2515 N. Proctor St. on Saturday, Oct. 3. It is the third restaurant to close at that Tacoma address in under two years.
Owner Chris Olsen confirmed the decision in an email Monday, Sept. 28, the Tacoma News Tribune reported. He pointed to ingredient costs and the labor demands of scratch cooking as reasons the Proctor location never reached profitability.
"Unfortunately, the fresh, made-from-scratch ingredients that go into all of our products are both expensive and labor-intensive, and we have not been able to achieve the financial profitability necessary to continue operating the Proctor location," Olsen said in a message posted on Fondi's website.
In a phone call Tuesday, Sept. 29, Olsen added that rent, which he said likely fell on the higher end of the market, also played a role.
The restaurant opened around April 2025, replacing Millville and The Blind Pig. That concept, an extension of Gig Harbor's Millville Pizza Co., had itself lasted less than three years in the roughly 2,600-square-foot space. Before that, Europa Bistro occupied the address for years.
Millville's operators had installed a wall between the dining room and a vintage wooden bar to create a cocktail lounge. When Fondi moved in, Olsen tore the wall out and opened the kitchen to the dining room. The restaurant used a counter-service model where guests ordered and paid upfront. Some online reviewers called the setup "cafeteria-style."
Fondi serves 12-inch pies baked in a gas-powered brick oven. No pizza tops $23. Lunch specials include a 10-inch personal pie for $13.
Olsen said the Proctor closure means the business will miss the chance to support local schools and its regulars. Fondi's Gig Harbor location, at 4621 Point Fosdick Dr., will remain open and will honor all gift cards and loyalty points earned at the Proctor shop.
The closure leaves two prominent restaurant vacancies on Proctor. Knapp's Restaurant & Lounge, a neighborhood fixture since 1938, closed after service on June 13 under owner Billy Brewer, who had purchased the business in August 2025. Brewer told the News Tribune in June that he had been "chasing profitability" but "just never really got there."
Fondi's remaining Proctor hours before Saturday's final service: Tuesday through Thursday, 2 to 8:30 p.m., and Friday, 11 a.m. to 9 p.m.
